The Plant
The coffee plant belongs to the Rubiaceae which includes
60 species of coffea. However only the first four are known: Arabica,
considered the most prized one, Robusta, Liberica and Excelsa kind.
The coffee plant demands particular climatic conditions:
the most suitable is the one between the two tropics,
where the climatic variations are not excessive and the temperature
settles between 15° and 25°.
The operations to extract the seeds, that will become
coffee-bean, are several and complicated: first there is the transplant,
then it is necessary to wait for the natural blossoming and fructification,
to pass, finally, at the work phase.
Coffee-beans endure particular procedures like: cleaning,
selection, washing, exsiccation, in fact the characteristics and
the best qualities depend on these actions.
Finally the raw beans come collected in bags of juta,
now destined to commerce.
